You (or the articles you are reading) seem to be overreacting. Concerning canvas fingerprinting, it isn’t a very practicable approach, at least compared to all other fingerprinting approaches. I wrote a bit about that under https://adblockplus.org/blog/adblock-plus-and-the-canvas-fingerprinting-threat.
Concerning WebRTC exposing IP addresses: the browser makers certainly need to address this somehow. The overwhelming majority of people doesn’t really care about that however, simply because they aren’t using proxies/VPN. In the meantime, if this issue is a concern for you, there seem to be extensions to disable WebRTC both for Firefox and Chrome.
